Mexican Soup

This soup turned out amazing. Full of flavor and spicy with fresh vegetables and chicken. If you don’t like your soup very spicy use only 1 jalapeno pepper.

Supplies:

  • Large stock pot
  • Cutting board and knife
  • Large fry pan
  • Long handle spoon
  • Ladle
  • Serving bowls

Ingredients:

  • 2 large skinless chicken breast fully cooked and diced into small pieces
  • 1 large green pepper (rinse, remove membrane and dice small)
  • 2 jalapeno peppers (rinse and dice small, including the seeds)
  • 5 garlic cloves peeled and sliced
  • Olive oil
  • 1 large fresh tomato (dice small)
  • 1/2 yellow onion (peel and dice small)
  • 2 cans of corn do not drain
  • 1 avocado diced
  • Shredded cheese
  • Fresh cilantro leaves
  • 1 can of chicken stock 49 ounce can, plus 4 more cups
  • Salt and pepper to taste

In your fry pan pour just enough olive oil to coat the bottom. Add your green pepper, jalapeno, onion and garlic. Saute till tender.

Pour your chicken broth in your pot, add corn, tomato, chicken and all contents in your fry pan. Stir well, let simmer on low for about an hour, stir frequently.

Add salt and pepper to taste.

Ladle into serving bowls. Add cilantro, avacado and shredded cheese. Serve warm.

Serves about 4 large bowls.

Raspberry Bbq Pulled Pork

This bbq is full of many flavors combined with fresh spices. Its not to sweet but just perfect.

Supplies:

  • 8 quart cast iron pot with lid
  • Large lasagna dish
  • Cutting board and knife
  • Fork
  • Tongs

Ingredients:

  • 1 pork butt (mine was almost 6 pounds)
  • 1 cup of apple juice
  • 1 red onion (peeled and sliced)
  • 1 jar of raspberry jam
  • 3/4 cup of honey
  • 4 stems of fresh oregano leaves removed
  • 4 basil leaves diced small
  • 3 stems of rosemary
  • 3 garlic cloves (peeled and diced)
  • Salt and pepper
  • 1 cup of your favorite bbq sauce

Preheat oven to 300°

Using your cast iron pot, place your pork butt inside. Now pour your apple juice in the pot. Next cover your pork first with honey then your raspberry jam and onions. Now add your salt and pepper to taste, garlic and fresh herbs.

Place the lid on top and bake in the oven for 4 hours or till pork is completely cooked with no pink to show.


Once cooked remove rosemary. Next place your pork in your lasagna pan and pull apart using a fork and knife. Remove unnessary pieces of pork, spread evenly in your dish. Using about 1 cup or more as desired of the drippings from the pork, include all the onions. 


Now spread evenly your bbq sauce, add more if desired.


Gently stir using your tongs. 

Place back in the oven at 300° for about 30 minutes or till bbq becomes just a little crisp.


Serve on garlic butter toasted buns, serve warm. Will feed about 12 sandwhiches.

The difference between violet and purple is that violet is displayed in the visible light spectrum, while purple is simply a mixture of red and blue. Violet vibrations are the highest in the visible spectrum. Although violet is not quite as intense as purple, their essence is the same. Stuffed Chicken Cacciatore

This dish takes some time but its so worth it. Its a different look on cacciatore. Perfect dinner for family and friends.

Supplies:

  • Lasagna pan
  • Cutting board and knife
  • Large pot
  • Spoon
  • Tin foil
  • Oven mitts

Ingredients:

  • 3 or 4 skinless chicken breast (slice horizontal, do not cut all the way through)
  • 8 slices of smoked provolone cheese
  • Oilve oil
  • 1 whole garlic clove (remove skin and slice thin)
  • 10 stems of fresh oregano, leaves removed
  • 5 fresh basil leaves diced
  • 1/2 red onion sliced thin
  • Baby spinach
  • Salt and pepper
  • 1 jar of your favorite tomato sauce
  • 1 box of fettuccine (cook to manufactures instructions) set aside

Pre heat oven to 350°

Pour enough Olive oil to cover the bottom of your lasagna pan. 

Once you have your chicken breast sliced, salt and pepper your chicken. Next layer your cheese, garlic, oregano and spinach.

Close your chicken breast and set in your pan.

Now add your onions, garlic, basil and oregano. If desired salt and pepper.

Now pour your tomato sauce. Not the entire jar, just enough to cover.


Cover with tinfoil and bake for about an hour to 1- 1/2 hours, depends on the temperature of your oven. Chicken needs to be fully cooked with no pink to show. 


Plate your chicken on top of your fettuccini, be sure to add drippings from the chicken and onions. Add shredded cheese or parmesan cheese if desired.


Serves 3 to 4. Serve warm.

Gnocchi and Italian Sausage

Oh my goodness this dinner was amazing. Italian sausage and gnocchi smothered in mozzarella cheese sauce. Oh my goodness.. I really have nothing more to say.

Supplies:

  • 2 large pots 
  • 1 large fry pan
  • Cutting board and knife
  • Spoon
  • Serving dishes

Ingredients:

  • 1/4 red onion peeled and diced
  • 1 red tomato diced
  • 3 large garlic cloves peeled and diced
  • Olive oil
  • 5 Sweet Italian sausage links (using one of your large pots, boil till fully cooked, then slice and cut into quarters. Set aside)
  • 1 package of gnocchi (using your large pot cook to manufactures instructions, drain and set aside)
  • 8 ounces of heavy cream
  • 1/2 cup of milk
  • 1/2 stick of butter
  • 2 cups of shredded mozzarella cheese then 1 cup to sprinkle after your dish is platted.
  • Salt and pepper
  • 5 stems of fresh oregano, leaves removed
  • 5 fresh basil leaves diced



    In your fry pan drizzle just enough olive oil to cover the bottom of the pan, add your onions, tomato and garlic. Saute on medium till onions are tender do not over cook.


    Add your sausage, basil, oregeno, salt and pepper, cook on medium low for about 15 minutes. Set aside.

    In one of your pots add butter, 2 cups of mozzerella, cream and milk. Cook on low stirring constantly till cheese is melted. Set aside.


    Now on a serving plate first layer your sausage mixture, then gnocchi and cheese sauce. Sprinkle mozzarella on top, serve warm.

    The Beautiful Magnolia

    I am extremely lucky to have these beautiful flowers where I live. Every year I take plenty of photos, I’m sure my neighbors think I’m crazy. I don’t mind. 😊 This year I may have taken about 22 pictures. These are just a few of my favorites.

    Not only do they hold such beauty but their fragrance is heavenly.

    Next time you see one, stop and admire. They don’t last long, but their time with us is truley worth it.
